CHINESE TEAS

Yunnan Pu'erh fermented dark tea. heps with fatty meals and digestion.

Pu'reh

Raw Yunnan Pu'erh is a slowly fermented dark tea featuring a shifting flavour profile in that it transitions from bright punchy and bitter notes when young to deep smooth and honeyed characteristics as it ages. Its core taste is "Huigan"  which means "returning sweetness" It is a sensory tea tasting term for a delayed, deep sweetness that rises in the back of the throat 10-30seconds after you swallow a bitter or astringent - its not like sugar rather refreshing, cooling and long lasting.  Raw Pu'erh is exceptionally good to drink after meals to cleanse the pallet and assist digestion of fats and oils. ​Regular consumption of Pu'erh tea prevents against heart disease because it helps produce Lovastatin - a natural statin used to treat high cholesterol.

Bitters are so important to our health, initially upon first contact they trigger a sensory response in the mouth. The sensation of bitterness is then directed by the nerves to the central nervous system. From here a message goes to the gut giving rise to the digestive hormone gastrin. Water - the Mother of Tea

* When possible use filtered rainwater.

* If using tap water make sure it's filtered as usually it will contain a lot of chemicals.

 

*Avoid using distilled water, although its light it has lost all of its natural elements.

*For ceremonial brews collect rainwater in a glass or crystal bowl, OR source water from natural springs & pray to the water. (see Apothecary for a water blessing) - Avoid water from Hot Springs.

Heating the Water

*Different Teas require different water temperatures.

*Delicate Teas like Green, Sinicuichi & our  leafy Menopausal Herbal Infusion range- boiling the water to 100 degrees C will destroy the active ingredients, drastically reducing the health benefits.

*These teas are most beneficial & potent when the water is brewed between 80-85 degrees C.

*For Pu'erh, Oolong & Infusions that contain root parts of Herbs 100 degrees C is the recommended boil temperature of the water, with a steep time of 5-7minutes.

ON TEAPOTS........Tea tastes better in certain Teapots!

ITS TRUE.  There is no correct or superior way to choose a Teapot - it rests with the individual. However first and foremost you must love how it looks as many a moment and conversations will be shared with this little Teapot beside you. A teapot is a trusted friend.

If you can examine the Teapot before purchase or ask questions, things to consider are...

*How well does the lid fit, a snug fit without being too tight is good, a loose lid will leak tea from the lid.

*How well dose it pour - you want the tea to flow out in one continuous gentle stream, not choking or lumps of water.

*Check the handle is comfortable to hold and lift up, if it slips in your grasp or pulls sideways  the weight distribution of the Teapot is off.

*Each Tea has its own Teapot. Glass Teapots for light teas, Green/Herbal Leafy Infusions,.

Darker Teapots for Black teas, Puer'h Oolong ect...

Teapots especially clay Chinese Teapots take on the colour, essence & energy of the Tea becoming the sacred vessel for the Ceremony, service & offering of the Tea.

Having a special teapot for each different Tea is a way of honouring the Spirit of that plant and ensuring the pure taste of the Tea is preserved.

STORING THE LEAVES

It is vital to keep your Tea leaves dry & away from any humidity & odours that will change their taste. Tea Tins, sealed glass jars & clay Tea Containers are the best options to store your Tea long term.

Avoid crushing the delicate leaves, this destroys the active ingredient molecules that are intact in full leaves.

Jiaogulan is best kept long term sealed, away from moisture & in the fridge.

Da Hong Pao and Sinicuichi is best kept in Clay and Stone sealed Tea containers

Pu'erh Tea is best kept in Clay Tea Containers as the older this tea is the more refined the taste. Some of the world's finest Pu'erh tea is hundreds of years old.
