Raw Yunnan Pu'erh is a slowly fermented dark tea featuring a shifting flavour profile in that it transitions from bright punchy and bitter notes when young to deep smooth and honeyed characteristics as it ages. Its core taste is Huigan - which means "returning sweetness" It is a sensory tea tasting term for a delayed, deep sweetness that rises in the back of the throat 10-30seconds after you swallow a bitter or astringent - its not like sugar rather refreshing, cooling and long lasting. Raw Pu'erh is exceptionally good to drink after meals to cleanse the pallet and assist digestion of fats and oils.

Using a tea pick place your tea on a wooden chopping board or in a designated wood Tea separating tray and pick off about a 50Cent size chunk of tea. Use your fingers to separate the tea into smaller leaves.

Place the leaves inside a teapot for one, if it's for more people double the size of the tea.

Pu'erh requires very hot boiling water each time.

Pour boiling water over the tea and then tip the entire contents of the tea out.

Pu'erh needs to be cleaned and opened

Immediately re-pour hot water over the Pu'erh and begin drinking from this brew. The flavour will start out light then rise to a peak before slowly loosing flavour.

Depending on the size of the teapot it may be refilled 5-7 times before the flavour is gone.
